Fried chicken is my favourite comfort food and the one dish I always ask my mom to make whenever I go home for a visit.
My version is gluten free but just as crispy and delicious as mom’s. It’s also as easy as it gets with only two ingredients (we’re not counting spices and seasonings, right).
I like to have my Shaved Brussels Sprouts on the side but if you’re looking for the ultimate super simple supper try my Creamy Coleslaw instead.

Crispy Fried Chicken
- 6 chicken thighs, bone in and skin on
- 1 – 2 tablespoons coconut oil (or preferred cooking oil)
- salt and pepper to taste
- 1 tsp. garlic powder
- 1 tsp paprika
- Using a pair of kitchen shears, remove the bone from each chicken thigh, leaving the skin intact.
- Heat oil in skillet over medium-high heat.
- Season chicken on both sides.
- Add chicken skin side down in skillet and cook, undisturbed for 7 – 10 minutes or until crispy and brown.
- Flip chicken over and cook for another 3 – 4 minutes or until cooked through.
- Remove chicken from skillet and set on wire rack to rest for 5 minutes.
